Diabetes-Friendly Veggie Stir-Fry with Grilled Chicken

Ingredients:

  • 1 medium chicken breast (or tofu for a vegetarian option)
  • 1 tbsp olive oil
  • 1 cup broccoli florets
  • 1 small bell pepper, sliced
  • 1 small zucchini, sliced
  • ½ cup mushrooms, sliced
  • 1 clove garlic, minced
  • 1 tsp ginger, grated
  • 2 tbsp low-sodium soy sauce or tamari
  • 1 tbsp sesame oil (optional)
  • 1 tbsp chia or flaxseeds (optional for fiber boost)
  • ¼ avocado (optional, for healthy fats)
  • ½ cup cooked quinoa or cauliflower rice for a low-carb option

Instructions:

  1. Prep the chicken: Season the chicken breast with a pinch of salt and pepper. Grill over medium heat for about 5 minutes per side or until cooked through. Slice into strips and set aside.
  2. Stir-fry the veggies: Heat olive oil in a pan over medium-high heat. Add garlic and ginger, stir for 30 seconds, then add broccoli, bell pepper, zucchini, and mushrooms. Stir-fry for 5–7 minutes until veggies are tender but still crisp.
  3. Add flavor: Pour in soy sauce and sesame oil, tossing everything to coat evenly. Cook for another minute.
  4. Assemble: Serve the stir-fried veggies with sliced grilled chicken over quinoa or cauliflower rice. Sprinkle chia or flaxseeds on top for added fiber and omega-3s. Add avocado slices if desired.
